My cute friend Tiff brought the most amazing treat to tennis the other day. Do you want to know what it was? I can't wait to share this with you.....
She makes Homemade protein bars for her family. She sends them with her kiddos to their various sports activities. Genius right? Right! The best part is they aren't all nasty and chalky like the pre-packaged ones you buy in the store. They're actually quite delicious and chalk full of healthy ingredients you could only dream your kids would want to devour. No unhealthy preservatives or fillers either. I'm excited to send these beauties out the door with my kiddos too! And I might just keep a few extras lying around for myself. : )
Homemade protein bars
¼ C. Bob Redmill’s 5 or 7 Grain Hot Cereal Mix
12 scoops of Chocolate Whey Protein
4 T. Chia seeds
2 C. non-fat dry milk
¼ C. roasted/salted pumpkin seeds ½ cup blanched slivered almonds
2 (.5 lb) containers of dried blueberries (no sugar added)
¼ C. Honey Roasted Sunflower Nuts (Good Sense brand is good)
1 C. Bob Redmill’s Flaked Coconut Unsweetened
10 T. fresh ground almond butter
½ cup Coconut Oil-cold pressed (consistency of Crisco)
2 t. vanilla
1 C. water (or more if needed)
Sprinkle with sea salt
Mix all dry ingredients together with a large mixer. Slowly add wet ingredients. Add extra water as needed. The mixture should be slightly sticky. Press into a jellyroll pan that is sprayed with pam. Cover and refrigerate for at least 2 hours. Cut into bars and Wrap in Saran wrap.
Store in refrigerator or freezer.
